It was a big day today, we held a tasting session to review our four core ingredients for Lilliput Dorset Gin. We've always know that we wanted to use Rosemary, Basil, Thyme and Olives but we weren't sure in what proportion so we spent today trying things out.
At the end of the day we were definitely happy with our choice of the four key ingredients, we agreed that infusing them separately was absolutely the right choice and then agreed the proportions of each and the blend of other botanicals that we'd be using when it comes to full scale production. Of course for a gin, juniper has to be the predominant botanicals but this others can be a bit of a mystery.
